Pan Seared Denver Steaks with Roasted Potatoes

I was fortunate to get to try some amazing meat from Grow and Behold this holiday season! If you follow me on Instagram (@chefeitanbernath) or Snapchat (eitanbernath), then you saw all of meat I got to try. I got a bunch of chuck steaks, a french brisket, Denver steaks, and a bunch of baby lamb chops! I can’t wait to share a delicious recipe with all of those soon. I’m thinking of doing something Indian with the lamb chops! I’m very excited for that.

Today I am sharing with you all a recipe with their beautiful Denver steaks. I seared then on a screaming hot cast iron skillet. This gives you a really nice crust on the outside, while locking the juices inside. I actually learned this trick at Etc. Steakhouse, in Teaneck, when I interned this past summer. I then plated them with a side of roasted potatoes because, if you haven’t figured it out yet, I love potatoes! The outstanding quality of the meat was obvious from the first delicious bite. Rosemary Garlic Roasted Potatoes

Ingredients
  1. 1.5 lb mini russet potatoes, cut into quarters
  2. 2 tbsp olive oil
  3. 1 tbsp rosemary, chopped
  4. 2 cloves of garlic, chopped
  5. Salt & Pepper
Instructions
  1. Preheat the oven 400 Degrees Fahrenheit.
  2. In a medium bowl, combine all of the ingredients.
  3. Place the potatoes on a large baking sheet and then into the oven.
  4. Bake for 30-40 minutes, until they are crispy on the outside and soft in the inside.

Ingredients
  1. 2 Grow and Behold Denver Steaks
  2. 2 TBSP extra virgin olive oil
  3. 2 sprigs of rosemary
  4. 1 clove garlic
Instructions
  1. Heat up a large cast iron skillet on a medium-high flame.
  2. Add in the olive oil to the pan and until its hot.
  3. Season the steaks with salt and pepper
  4. Place the steaks in the pan with a sprig of rosemary on top of each.
  5. Sear on both sides for 4 minutes.
  6. Using a pair of tongs, hold up the steaks to sear each of the other four sides for a minute per side.
  7. Once seared on all the sides, carefully rub the garlic clove all over the steaks.
  8. Remove the steaks from the pan and let them rest on a plate for 8-10 minutes before serving.
Notes
  1. Rubbing the garlic all over the steak infuses the flavor of the garlic into the steaks.
