Non-Alcoholic Piña Colada

I have been spending this week of the summer down in Delray Beach, Florida. We’ve been having tons fun soaking up the sun. A few days ago we drove three hours to Marco Island which is on the other side of Florida by the Gulf of Mexico. We were there to go kayaking in a mangrove forest. We rented from a great company called Paddle Marco.  With tour guide Ryan, from Rising Tide, which was awesome. In our private three hour tour, we saw wild dolphins, crabs, sea urchins, tons of fish, and Ryan even spotted a manatee. It was a once in a lifetime experience that I would recommend for anyone. Another day back in Delray, we rented some awesome electric bikes. It was fun cruising around.

The rest of the time we have been hanging out at the beach. What would make it feel more tropical and fun than a nice cold Piña Colada? So I began developing a recipe in our small kitchen of my grandparents condo down here and I came up with the easiest Non-Alcoholic Pina Colada Recipe ever! It’s only three ingredients and is super yummy and refreshing. It’s the perfect drink for a lazy day at the beach!

Non Alcoholic Piña Colada

Ingredients
  1. 3 cups chopped pineapple
  2. 3/4 cup cream of coconut
  3. 4 cups ice
Instructions
  1. In a blender, combine the pineapple, cream of coconut, and ice until its a thick homogeneous drink.
  2. Pour into glasses and garnish with a wedge of pineapple.
  3. Serve cold.
