Diego’s Guacamole


This past week I have been interning at my favorite restaurant, Salsa Metsuyan. It was super cool to see what its like to work in a restaurant kitchen. I spent a lot of time learning from one of their cooks named Diego. He really knows his stuff. He is like a walking encyclopedia of Mexican food.  It was such an amazing opportunity to learn from such a knowledge and friendly person.  

As past of my time at the restaurant, I was to come up with a fish taco to add to their upcoming Nine Day menu. In my usual fashion though, I decided to come up with three! Diego helped me fine tune the recipes.  The tacos were blackened tilapia, miso salmon and tuna ceviche taquito. All three tacos are being added to their Nine Day menu.  Definitely stop by during the Nine Days if you want some unique and delicious food.  

During my time working with him,  I asked him to share with me his favorite guacamole recipe. Because who doesn’t love a good guacamole? And if there is anyone who knows how to make a good guacamole, it’s him! 


Diego's Guacamole

  1. 3 avocadoes
  2. ½ lime, juiced
  3. Salt & Pepper
  4. ½ red onion, diced
  5. ½ tsp jalapenos, diced
  6. 1 garlic clove, diced
  7. ½ cup tomato, chopped
  8. ½ cup hearts of palms, chopped
  9. 2 tsp cilantro, chopped
  1. In a large bowl place the scooped avocado, lime juice and salt and pepper to taste.
  2. Using a potato masher mash the avocados until they are smooth.
  3. Then, fold in the onions, jalapeno, garlic, tomatoes, hearts of palm, and cilantro.
  4. Serve with tortilla chips.
